The Brix scale is used to measure sugar concentration in wine, fruit juice and fruits and vegetables. It’s named for Adolf Brix, the 19th-century Austro-German mathematician who devised it, and it’s expressed as “degrees Brix” or “degree-sign Bx.” Ripe grapes usually measure 18 to 24 degrees Brix and garlic (believe it or not) typically measures more than 30 degrees Brix.
